Some of the most extraordinary ingredients in the world can't be cultivated, they have to be found. Wild mushrooms operate on nature's schedule, not ours, and that's precisely what makes them special.
We work with trusted foragers in the Pacific Northwest to source wild mushrooms throughout the year. Morels, chanterelles, and porcini are our anchors, varieties we pursue every season, though availability and pricing are always subject to what the forest actually produces that year. When conditions are right, other rare and exceptional varieties make their way to us as well.
We don't carry wild mushrooms year-round. When we have them, we communicate availability directly to our partners and customers. That's part of what makes them worth waiting for.

Wild mushrooms have a reputation for being out of reach. We'd like to change that where we can. Our goal is to make these ingredients accessible, because a mushroom nobody can afford to cook with is a mushroom that goes unappreciated.
Restaurant partners with standing orders receive preferred pricing on wild mushrooms. It's our way of recognizing the trust and commitment that goes into a long-term supply relationship.
