Lion's Mane
Hericium erinaceus
Cascading white fruiting bodies that pull apart into strands resembling crabmeat. One of the most visually compelling ingredients on any tasting menu.
King Trumpet
Pleurotus eryngii
The most substantial mushroom we grow. Sliced and seared, the dense stem develops a caramelized crust that closely mimics dry-scallop texture.
Blue Oyster
Pleurotus ostreatus
The workhorse of the oyster family. Meaty caps, mild complexity, subtle anise finish. Holds structure in high-heat applications with ease.
